Like anything worthwhile doing, it helps to form a habit and do it when you're in a good headspace so that when you're in a not so good headspace it flows and feels natural to you.
Don't wait until your mental health declines to begin writing down how you're feeling.
You wouldn't wake up one day and decide to run a marathon, you'd train and work on yourself each day, much like you need to do to maintain a positive mental health.
